It’s been a while since I’ve posted pics of my cooking so last night I whipped out the ole’ iPhone and snapped some shots as I cooked. I call these mum’s lamb chops as the recipe comes straight from her and all I’ve done is to attempt my best recreation. They still don’t compare to the real deal original version.
First up the sweet potato fries. They’re crazy easy to make – chop them into the right shape, add olive oil + salt & pepper and place on foil ready to go in the oven. Turn after 20 mins, take out after another 20.
I took all the awkward pieces of the sweet potato that couldn’t be chopped into a nice chip-sized piece and threw them into a pot of boiling water with some salt and garlic. When they’re soft I added a bit of butter and mashed with a fork.
The lamb chops marinated in olive oil, lemon, garlic, mint, cumin powder, chili flakes and salt.
And into the pan, preheated to very high
Turned on their side for a few minutes to cook the fat

While the lamb is resting, I take the sweet potato fries out of the oven and season with a bit more salt & pepper.. yum!
Dinner is served!
Of course no foodoshoot (photoshoot..but with food.. get it??) would be complete without an inside shot of the lamb. I like mine on the rarer side, and this was just perfect. Most of the other pieces weren’t quite as rare but that’s just fine – lamb is delicious as medium or even medium-well.
And there you have it. This dinner is so crazy easy and quick to make, healthy and delicious as all hell. We usually have it at least once a week. I definitely recommend trying it out!
