I did it again. It was even better this time. I don’t know how that’s possible but it was. No really, it was.
After the day of poker I just finished (see below) I really, really wanted a big steak. I got a call from Puneet saying she was meeting up with some friends after work so the moment I got off the phone I picked up the keys and drove straight to buy me one big badass steak. I’ve recently discovered a new grocery store that sells these bone-in ribeyes for $9-$12 (depending on size) which is INCREDIBLE. Anyway, enough rambling, photo time!

Resting the steak - A very important step. Last time I just put it on a plate but a superior way of resting your steak is to put it on a rack on top of a plate -- this way any juices that may drip out of it won't pool and cause the steak to get soggy (and thus ruining the crust you worked to hard to create!)

Meanwhile.. I created some blue cheese butter. It is crazy simple to make. All you do is get a chunk of blue cheese, a chunk of butter, and mix them together in a bowl with a fork. The stronger you want it the higher the blue cheese : butter ratio you should us (I use about 1:1 which is fairly strong). Mix it well and then wrap in some cellophane and leave in the fridge to set.

I went all out today and deep fried some potato wedges. I would have preferred some big chunky steak fries but we didn't have any left - these turned out great though!

Me (at the time of the photo): "I'm happy. Sooo happy." Then I ravished the plate in about 4.2 minutes.
Now i’m off to bed with my laptop to play some more poker – the games look good. I may regret this since I am sooo content right now but the poker player in me just cannot resist sometimes. Goodnight all.
